This is really something you should talk to your teacher or education liason officer about, instead of asking on the internet. No one knows you better than you do.

Software engineering is progamming oriented. You create software and write code, maintain it with bugfixes and deploy them.

Operations research (O.R.) is the discipline of applying advanced analytical methods to help make better decisions. It typically involves using math, statistical data, and algorithms etc. to create decisions.

As you are student of MCS so you should choose Software Engineering.

Operations Research is also a good mathematical/business subject but you can learn it later but Software Engineering is relevant to your field.

Not likely. In order to apply for a work permit, you must have a job offer from a Canadian company which has permission to hire foreign workers. Such permission requires the company to apply for a labour market opinion (LMO) report showing a shortage of workers in Canada in that profession. They must also include proof that they advertised for the job in Canada and no qualified Canadians applied. There is no general shortage of researchers in Canada. Canada has one of the highest rates of post secondary education. Further, such jobs are also extremely easy to outsource to foreign firms and those which can't be outsourced would typically require extremely specific skills and experience within Canada.
