I always format the cells to £ where needed, and save, but recently the cells keep changing back to $ everytime I re-open the file. Why is this and what can I do?
I already tried the auto correct option but it still didn't work..

Bit of a mystery your problem, I must confess because despite the default settings on your computer as to language, English USA or UK, the fact that you format the cells in Excel itself, they should stay as that. I suppose it goes without saying that when you change the format to £ you actually hit the OK button.
Obviously something is amiss and, though it shouldn't make any difference as I have said above, I would advise going into control panel and regional and ensuring your language is set to English UK. At least you are going the right way about formatting the cells and not just using currency icon on desktop as this, of course is not true currency (well, American currency) but accounting which means the £ symbol goes to left and any zeros are displayed as dashes.
If it doesn't right itself, run a detect and repair through Help if you are pre 2007. If you are 2007 you have to go to Office Button down and across to Excel Options, hit the resources button on the left and then you will see diagnose on the right.

It sounds like your default currency is dollars. Check that your regional settings are correct.
Open the control panel and select Regional and Language options. Make sure all the settings are set to English (United Kingdom) and that the default currency is £.
See if this resolves the issue.

highlight all the cells you want to format and then right click or the equivalent and select format cells. Then under numbers you should see a list of ways numbers will be displayed. Choose currency and set it to what you want it to be and it should give all number proper $ and decimals.

Right click format cell, select currency, select symbol as the pound sign. And just keep change the value back from dollar to pound.
