Microsoft made windows 10 a recommended update so I changed my settings not to update automatically and now I was wondering, sometimes when windows updated my computer it doesn't have all updates checked like I see a bunch of windows for 7 updates and there are always one or two unchecked.

If I don't update automatically how will I know which ones to select? How does windows update exactly work if I don't have it set to automatic? Could it be harmful in any way?

Switch on automatic updates again. While in the settings remove the check mark from “Give me recommended updates the same way I receive important updates,” so that Windows doesn’t download Windows 10.

Here’s an image of what you’re looking for. It’s right underneath the drop down menu where you chose to turn off automatic updates.

Even if by some crazy happening it did download it wouldn’t install automatically. Users have to deliberately give permission before the installation can begin. It’s not some little dialog box either. It’ll be super obvious and take up the whole screen.

If you don't do the updates within 24 hours of their release, then the bad guys will know how to attack your system, thru the bits that are not patched. If you don't do the updates automatically, then it is up to you to do them!!

Your machine could become insecure as most updates are to improve security.
