Then you should know the best format of iPod touch is 640x480 mp4(H264/AVC video codec, AAC audio codec), so I think you need a right converter to convert the downloaded youtube videos to iPod touch mp4, then you can transfer the converted videos to itunes, and sync it to iPod touch. I am using RZ Video Converter which can convert any videos or audios between different formats, such as convert the downloaded videos to iPod touch mp4, etc. Try it by yourself.
