I try to indent the start of my next paragraph and the whole paper indents. How do I fix this?

In Word, you don't use a tab to indent the first line of a paragraph. You use First Line indentation, instead:
1. Select all the paragraphs you want indented. (CTRL/A will select the entire document.)
2. Right-click in the selection and select Paragraph from the pop-up menu.
3. Set the Special list box to First Line.
4. Click OK.
The text will now be first-line indented, and so will any text you add in that region.

On the Home Tab > Paragraph group, click on the arrow in the lower right corner. Click on Indents and line spacing and under Special choose First Line and set the indent that you want. If you want this as the default click on default at the bottom of the window.
