Are you trying to extract text from a jpeg? The fastest way is to retype it. Interns are good for doing this. The next way is to use a photo editing program to turn all the colors, that are different than the color of the text to white (or black) and then use an optical character recognition program to extract the test.

As far as I known you can download a screen capturer ,I've used one named "snageit" it's free.And its capturing rendering is very nice.Then you just put the images into the OCR recognition of MS WORD . find the tool there has a OCR recognition and a output to word option,push it in order.Finally you will get a editable doc.
