I prefer to use the additional GIMP plugin called G'MIC for that. It allows you complete control over converting to black and white, with options and sliders to apply the digital equivalent of filters, as if you were using a film camera with black and white film.



G'MIC for GIMP is free here: http://gmic.sourceforge.net/ - once you have installed it, restart GIMP to complete the installation.



Once installed you access the plugin by clicking Filters > G'MIC > Black & White > Black & White. Move the sliders until you get the effect you want and hit OK.
