I'm trying to understand the whole GNU/Linux term. I know GNU is the software and Linux is just the kernel, but I am I correct to assume that if I'm using Ubuntu, the name would be Ubuntu/Linux and not fall under the GNU/Linux name or does all Linux based systems fall under the GNU/Linux term?

Like every mainstream Linux (or GNU/Linux) distribution, Ubuntu still includes many GNU tools and would not function without them. Type this in a terminal, and see for yourself:

man gcc

Ubuntu absolutely relies on the GNU C Compiler (gcc) to exist, and many other under the hood tools. But does that mean Ubuntu should be called a GNU/Linux distribution instead of a Linux distribution?

Well, the short answer to that is that the answer and related controversy is exists due to political infighting and ego-stroking.

Don't lose sleep over it.
