Windows Home Premium is the 'base' software included in almost every new OEM PC. Unfortunately, it is anything but 'Premium'. Using this version of Windows will probably suffice, if you do not have any older software that you really have to have. Many older softwares are not compatible with Windows 7. In fact, Microsoft has a 'compatibility' website that lists software that is compatible.

The Professional version includes 'WinXP Mode', which is a 'virtual' Windows XP. To use older incompatible software, you have to install it in WinXP mode and run it from there.

The Anytime Update key to upgrade from Premium to Professional was about $60 when I was forced by MS to pay more to run my older software. To me, the whole thing is just a marketing gimmick.
