I have this pdf file, that I've tried to extract a certain section from into a doc file via copy/paste. Problem is when I paste the text to word it comes up in an unknown format that's unreadable. How do I solve this?

try copying the part on Notepad first which will remove all text format. It should give you the raw text then you can copy it and paste it on your Word document

Pdf files are made so they can't be modified. The text in pdf files can't be copied in any way.
