I've been looking for a long time to find a good, high quality video converter... So far everything I've come across makes the videos pixelated no matter how high the resolution I set it is... I'm specifically looking for something that supports .avi, .mkv, .vob, and .m4v codecs

Are you saying that you expect your final encode to be of a higher resolution than your source video? That's not a limitation of your encoding library, it's more of a limitation of how vision works. When you stretch pixels, blend pixels, duplicate pixels -- whatever you do when you're upscaling your videos -- you're trying to create something out of nothing. Your product, needless to say, won't be perfect. If your source is 640 x 480 and you upscale to 720p, it's not going to look like the source was 720p, even if you have a really good upscaler and you're a very skilled encoder.

ffmpeg can handle everything you mentioned, although Matroska support is experimental.

Those aren't codecs though. None of them are, actually. They're containers which can contain lots of different stuff, for lack of a better word. You can have audio, subtitle/subpicture and video streams in different types of containers. So you could actually encode your video using something wacky like RV40 and then encapsulate it in a Matroska container and your software might have support for Matroska containers but not RV40. The container you use is, in many ways, independent of the codec you use. Of course, there are codecs that certain containers don't support, but you still have great choice in the matter, so you cannot just say that you need "AVI" support, for example, without specifying what video and audio codecs you're using.

I think it would be a good idea for your to seek help at doom9 rather than here. If you go there you might not even need to start a new thread for your problem, since you may find the answers in a sticky or something, since there are so many well-written guides for beginners.

But my point, in short, is that while I'm not very knowledgeable about these things, nor am I a particularly skilled encoder, even if I were a professional encoder, I would need to know much more about the settings you're using when encoding this video, because as I said, we don't even know what codec you're using, let alone the bitrate, resolution and any filters you need such as deinterlacing, cropping or colour adjustments.

In the meantime, I will tell you that ffmpeg does, indeed, have support for those codecs and you can get a GUI for XviD, Snow and x264 projects using MeGUI (which is excellent, by the way and very easy for a beginner with all of the included presets).

ffmpeg (Windows): http://www.videohelp.com/tools/ffmpeg

MeGUI (Windows): http://sourceforge.net/projects/megui/

Read doom9 though, since chances are that many of the questions you may currently have have already been answered somewhere on there: http://forum.doom9.org/
