I'm running the Ubunto linux operating system. I am having trouble with controlling the sound. When my headphones are plugged in, music still plays from the laptop speakers. How do I set the headphone output to override the laptop speakers?

Go to the ubuntu forums.

Tell them the problem and tell them what version of Ubuntu you're using. Then tell them everything about your computer, brand, what soundcard etc.

With that info the people there may know how to fix it.

Yeah +1 and I'll bet it's an intel audio chipset. Nope I don't recall the option, something like; options snd-hda-intel model=modelname" in /etc/modprobe.d/sound.conf ?? A quick search should but you'll kick it up nonetheless. Also checkout
