You cannot do this is in the way that you've phrased it.



Matroska is just a container. So is AVI. You can use mkvextract to extract the audio/video/subtitle streams and remux as AVI, but you cannot, for example, use multiple softsubs in an AVI container.





You were exceedingly vague in your question. You didn't tell us what you want to do. Therefore, I can't give you a tutorial, since you never mentioned what you want to accomplish.



What I can do, however, is take a blind guess as to what you want the end file to look like. Let's say you have H.264/MPEG-4 AVC video and AAC audio and you want, in the end, to have MP3 audio and XviD video. In that case, here's how I suggest you do it:



Get ffmpeg: http://www.videohelp.com/tools/ffmpeg



I'll make it easy and give you something you can copy and paste. Do this:



ffmpeg -i filename.mkv -vcodec mpeg4 -b bitrate_goes_here -vtag XVID -acodec libmp3lame -ab 128Kbps output.avi



You can try that without demuxing first. It should work. If it doesn't though, do the audio and the video separately and then remux after you've transcoded them as AVI.
