The regular CD for Ubuntu is a LiveCD.
I believe the regular CD for Linux Mint is also a LiveCD.
Knoppix is intended to be a LiveCD. A non-LiveCD version would be called "Debian."
What problems are you having burning Knoppix to a CD?

Regular installation disks for Ubuntu, Kubuntu and Xubuntu function as livecds. There are alternative installation disks which are usually not X-based. These are not fully featured livecds: older versions of Ubuntu are usable for more things. A good list of livecds is available at: http://livecdlist.com/
I'm sorry to hear you have a problem burning cds on knoppix or is it a problem burning cds when you're using knoppix? If it is the latter, let me point out that Knoppix, like Ubuntu is a Debian derivative. The Debian developers have a reputation for being quite strong in their opinions. They ran into some trouble with Mozilla trademarks and immediately rebranded their distros of Firefox and Seamonkey Iceweasel and Iceape. They also have had differences with Jorg Schilling (I probably have the name wrong) who developed CDR tools because of his close association with Sun Microsystem and Sun Solaris, and forked his program. When you use Debian's version, which like Iceweasel Knoppix includes, then the target is /dev/hdN where N is whatever letter is assigned to your cdrom drive. Schilling states that when CDR tools is configured properly recent versions don't require you to specify a target on the command line. Ubuntu of course uses Firefox, not Iceweasel. I don't know what version of CDR Tools it uses.
Since you asked for a recommendation try: http://www.dynebolic.org . It is distributed by Jaromil, an Italian Rastafarian living in Amsterdam. It is intended "for media activists". It doesn't seem to be based on any other distro but is actually quite good. It definitely offers a different look at the potentials of the Linux Operating System. I'm too old for drugs but sometimes have fantasies about hundreds of thousands of old laptops in Developing Countries running it.

Ubuntu is indeed available on a liveCD which you can just use directly from the CD or if you wish you can install it ,Mint is basically an Ubuntu derivative and the same applies use it directly off the CD or install, you can do the same with PCLinuxOS,Fedora8 and probably many others, try a couple and see how you get on.
