In Access 2003 Choose Tools Analyze and database Documenter which lets you create outputs from your report to many formats including a spreadsheet.
In 2007 Choose Tools Analysis then database document which can be exported to a PDF as well.
Alternatively Acrobat can create a file form the spreadsheet or Word document

Select fields (names and types) from the tables and use the recordset(s) to create a table or text structure you can import to a pdf document. (You can't use Access directly to create the pdf).

If you just want to create a PDF with table structure, you can try A-PDF Creator, you just need to open you file with table then click "File->Print", choose "A-PDF Creator", then your file will be converted to PDF format as quickly as possible.
