I was wondering if it was possible to split a 7 gb iso file for placement on 2 DVDs in a way that when you put the first disk in, it goes through installer, then it asks to insert disk 2 and continues the installation.

No, it's the iso of a DL disk, so you have to burn it to a blank DL disk. If you want to take the files off the iso and make 2 isos, you'll have to rewrite the installation program.
